2¾ cups flour ¾ cup white sugar ¾ cup brown sugar, lightly packed ¼ tsp. salt 1½ tsps. baking powder ½ tsp. nutmeg 1 cup milk 3 eggs 6 Tbsps. vegetable oil 1 cup prepared eggnog 1-2 Tbsps. spiced rum Preheat oven to 350°F. In large bowl mix flour, sugars, salt, nutmeg and baking powder. Make well in center of dry ingredients. Add milk, eggs, oil, eggnog and rum to well and whisk slightly in well to break eggs. Stir all ingredients until combined. Do not over mix as it makes bread tough. Pour into mini loaf pan sprayed with nonstick baking spray. Bake for 25-28 minutes (this will depend on how mini the loaf pan is). Cool for 10 minutes before carefully removing from pan.
