After working all day and then working out at the YMCA after work, when I get home, I don’t want to cook an elaborate meal. I spend my weekends cooking the largest meals, but I tend to take it easy during the week. While I will eat leftovers, my column dictates that I cook at least a couple nights a week to get it all ready for publishing. In order to facilitate that, I choose meals that are not going to take me more than 30 minutes to cook on any given day.
